i recently learnt to cook a meal that ACTUALLY TASTES NICE. even though i've been eating vegan for 9 months now, i'm still an appalling cook, but this is so easy even i can't go wrong which has meant it's quickly become my current favourite meal

YOU WILL NEED: some brown rice, a large amount of broccoli, 2 large handfuls of spinach, peanut butter, soy sauce, vinegar, a clove of garlic, half an inch of fresh ginger, some chilli flakes, a bit of sugar and some hot water
- whack some hot water in a pan with a cupful of brown rice and cook it on a medium heat for about quarter of an hour. don't sit in the kitchen whilst it's cooking because it's dead boring and you'll end up eating doritos/biscuits/snack foods to entertain yourself (i just did this). come back after 15 mins, leave the rice cooking on the hob, and put some broccoli in a bowl with a bit of hot water, cover and microwave for about 2-3mins.
- whilst that's steaming, put a level tablespoon of peanut butter in a small bowl with some chilli flakes, minced ginger & garlic, a tablespoon of soy sauce, a teaspoon of vinegar, half a teaspoon of sugar and enough hot water to mix it all into a fairly runny paste.
- when the broccoli's been steamed for a bit, add loads of spinach, cover and put back in the microwave for a couple more minutes. drain the rice, put the the steamed veg on top and pour the peanut sauce all over it.

this also works nicely with firm tofu, cubed and tossed in some sesame seeds and fried on a high heat until it's crispy, instead of the rice.
